Once a month, when Chef Mike Lofaro of Maui’s Grand Wailea Resort prepares a special five-course meal known as the Ka Malama Dinner, he and the hotel’s cultural ambassador, Kainoa Horcajo, set out to forage their island for its edible bounty.
